VEGETARIAN HOMESTYLE CHILI

Ingredients

2 cans (796 mL each) diced tomatoes
6 Tbsp. tomato paste
1 ½ cups beef broth or lager-style beer
1 box Homestyle Chili Seasoning Mix
1 large carrot, peeled and diced
2 celery sticks, cut into ½" pieces
1 can (540 mL) lentils, rinsed and drained
1 can (398 mL) pinto beans, rinsed and drained
1 can (540 mL) black beans
1 can (540 mL) red kidney beans, drained & rinsed
1 can (340 mL) Niblets corn

Instructions

In a large pot add diced tomatoes, tomato paste, broth, Homestyle Chili Seasoning Mix, carrot and celery. Bring to a boil then reduce heat and simmer for 15 minutes, stirring occasionally. Add lentils, all beans and corn; simmer for 20 minutes. Serve with grated cheese, and a dollop of sour cream on top if so desired. You may substitute any of the beans with beans of your choosing.
Delicious served with biscuits or corn bread.
Try it served over rice!
